2015 Cabernet Sauvignon Reserve LIBRARY

Our Reserve Cabernet Sauvignon is designated for our Reserve Circle members and is a tribute to the early winegrowing days of our region. Cabernet was one of the first varieties planted in the Santa Clara Valley well before the Civil War. At Sarah's, we take pride in helping to recall and reestablish the Valley's reputation for growing great Cabernet Sauvignon. 


Vinification:

The Cabernet from our home estate Napoli Block was picked in mid-October of 2015. We gently destemmed whole berries into small fermenters, cold soaked for three days, and allowed a robust native yeast fermentation. After pressing, the wine was barreled down and aged in French oak cooperage, 60% being new wood, for 18 months prior to bottling.
